Former soldier is turning rum sales into real support for Veterans

From the battlefield to the bar, a former soldier is turning rum sales into real support for Scotland’s leading veterans charity.

Dumbarton-based IslandSlice, founded by ex-serviceman Sylvester Herman, has launched its new Rum Punch to strong demand across Scotland, with a portion of proceeds pledged to Erskine.

Sylvester, a fourth-generation distiller originally from St Lucia, served in Iraq and Afghanistan before building a new life in Scotland. His decision to support Erskine reflects both his own experience and a clear understanding of the long-term challenges many veterans face.

He said: “When you leave the military, that sense of community never really leaves you. Supporting veterans is something that matters deeply to me, and Erskine plays a crucial role in making sure people are not facing challenges alone.

“This business has always been about more than just producing rum. It is about creating something meaningful. Knowing that every bottle can help support veterans and their families across Scotland makes this launch even more important.”

IslandSlice was established in 2016 and has grown from small-batch production into a fully licensed distillery in Dumbarton, producing a range of handcrafted rums using traditional Caribbean fermentation techniques. IslandSlice offers a refined portfolio of premium cane spirits and cocktails. Our collection also features our signature Scotch Bonnet Rum, and our handcrafted Dark Rum aged within Ex-Scotch Whisky barrels. Every bottle reflects our commitment to distinctive, innovative craftsmanship and celebrates our St. Lucian spirit and Scottish heritage. The Scotch Bonnet Apple and Ginger Rum cocktail is a customer favourite.

Sylvester learned the craft from his father, with knowledge passed down through generations. His journey has taken him across the world, from growing up in St Lucia, to New York and Germany, through military service and later into policing in Scotland, before returning to his roots to build IslandSlice.

The new Rum Punch blends Caribbean heritage with a Scottish base, and early demand has seen it snapped up across the country. Sylvester added: “The response has been brilliant. It is one thing to see people enjoying the product, but to know that it is also making a difference to veterans makes it all the more worthwhile.”
